Seadas, sweet and savoury together

Le Seadas, dolci e salate insieme

The right way to end a Sardinian dinner has a name: seada (or sebada).

It is a large fried pastry filled with slightly tangy fresh cheese, served hot and covered with honey, often the slightly bitter strawberry-tree one, or with sugar. The contrast is everything: the sweetness of the honey, the tang of the stringy cheese, the crispness of the pastry.

It is not just any dessert, it is a little ritual. Once you try it hot, you understand why in Sardinia it is almost an institution. Leave room for it in your stomach: it is worth it.
